A wagashi is usually made from sugar, starch syrup, rice, wheat and red beans.
The wagashi in the picture is called 練り切り(ねりきり)(nerikiri). It is made from 求肥(ぎゅうひ)(gyuuhi). Gyuuhi is one of the materials of japanese confectionery and a kind of rice cake made by kneading.
